Today is this yummy recipe!
This recipe was found on Pinterest and pinned by RxForHealthyLiving.com. However, I changed it a bit to make it my own.
It was probably the best tasting salmon I’ve ever had!!! Even my hubby thought it was amaaazzzing. SCORE!
I made the dinner in the morning prior to going to work and I later got these texts from him after he ate it…
Of course, I know he was just kidding about me quitting my job. Ha!
So let’s get started with this recipe so you can taste it for yourself.
Ingredients:
1 pkg of 16oz frozen salmon fillets (wild caught skinless) or 4-4oz salmon fillets of your choice
large stalk fresh asparagus
1-2 sweet potatoes (depending on your family size)
4 crackers of your choice
4 tbs honey dijon mustard
Lemon pepper
morton’s nature seasoning
preheat oven 375
cooking spray
foil
Let’s get started:
preheat oven
place foil over baking pan
spray with cooking spray
thaw salmon per directions
sprinkle lemon pepper onto each side of salmon
peel sweet potatoes and slice in circles
Cut end of asparagus off
crush crackers in a baggie until crumbs are made
lay out your salmon, potatoes, and asparagus on the foil
add 1/2 tbs honey Dijon to tops of salmon
divide cracker crumbs onto the 4 salmon fillets and press into the honey dijon
sprinkle nature seasoning over everything
bake for 15 minutes (turning asparagus and potatoes half way through) and add seasoning again
add 1/2 tbs honey Dijon to top of cracker crumbs on each salmon fillet and bake 2 more minutes
