Strawberry Romaine Salad With Homemade Poppy Seed Dressing

My family had a reunion several years ago. Everyone submitted recipes and we could purchase our very own Pool Family Recipe book.

My recipe book sits right on my counter. I love looking at it and being reminded of many times with my family, especially my great grandmother.

A favorite recipe out of this book is the Strawberry Romaine Salad. I make it for get togethers, holidays, or just for our dinners at home.

Ingredients:

2 bags or bunches Romaine lettuce

1 quart strawberries

slivered almonds

1 small red onion (optional)

Ingredients for Dressing:

2 TBS poppy seed

2 cups mayonnaise

2/3 cup sugar

1/3 cup half and half

2-3 TBS strawberry jam

1/3 cup raspberry vinaigrette dressing

Getting started:

Cut onions into slivers.  Cut strawberries into 4 halves long ways. Mix lettuce, onions, and strawberries.  Top the salad with almonds.

Mix all the ingredients for the dressing and refridgerate.

Wait until you are ready to eat the salad before you put the dressing on the salad mix. Only use half of the dressing you mixed. Save the rest for another time. Dressing will last 1 week in the refridgerator.
